Inspired by the small, family-run restaurants in the wine regions of France and Italy, the 28-seat Comtesse Thérèse Bistro is located in a building originally constructed in 1830 as a rectory for the neighboring church. Owned by vintner Theresa Dilworth, it has been open since October 2010.
Comtesse Thérèse Bistro’s French-Mediterranean inspired menu is short and simple and features local ingredients. It was developed by the restaurant’s classically trained Executive Chef Arie Pavlou, an experienced North Fork hunter, fisherman and mushroom gatherer who formerly owned the Coeur de Vignes restaurant and hotel in Southold. Herbs are grown in the restaurant’s own garden, fish are caught daily by fisherman Phil Carlin of Mattituck, duck comes from the nearby Crescent Duck Farm, and produce and fruit are locally grown. Pavlou ages his own steaks for 60 days, brines his own olives, and smokes his own meats using local hickory and cherry wood. The Bistro also belongs to a local organic farm’s CSA, which delivers vegetables, fruits, flowers and eggs weekly.
Wines poured at the restaurant are produced by Dilworth’s Comtesse Thérèse winery with grapes grown at Le Clos Thérèse vineyard on Union Avenue, Aquebogue. Choices include sauvignon blanc, chardonnay, rosé, blanc de noir, five merlot selections, and two cabernet sauvignon options. No beer or other spirits are available.
Enjoy wine tastes, wine flights, wines by the glass, and by the bottle. Indoor dining is available in the elegant Sky Room and Constellation Rooms, or at the bar. Outside, there is a Wine Garden with a miniature vineyard, herb gardens, and climbing roses, and a sunny outdoor roof deck.
Like its menu, the restaurant's decor is European inspired. Dilworth, an international tax lawyer at a major corporation when she’s not involved in her other enterprises, acquired the 1830's building in 2004. Formerly a saddlery and before that the rectory for the nearby church, she did much of the renovation work herself, with wide wood floors, tin ceilings, fireplaces, gilded moldings, and antiques. Years of red tape, however, prevented the restaurant from opening prior to last October. The restaurant also features a small chardonnay vineyard, herb garden, and lawn, and a sunny roof deck with views of the neighboring apple farm.
Dilworth has owned a vineyard since 2001. She produces her wines at Premium Wine Group in Mattituck using Alie Shaper, owner/winemaker of Brooklyn Oenology as a consultant.
