Grilling Up the North Fork's Bounty

When a heat wave hits, the last thing we want to do is cook in our kitchens. We can't eat out every night of the week. Why not head to the grill and create a meal that is locally sourced?

I love food. Equal to that is my obsession with wine pairing. Combining these two elements entirely from the North Fork is perfection.

The heat wave that has hit recently has made it unbearable to approach the kitchen, even if we are feeling creative. An ideal dinner scenario may be to visit your favorite restaurant in town and soak up all of the free air conditioning, while someone serves your delicious plate. However, this humidity has lasted a while and promises to stick around through the weekend. We must cook eventually, which is why I suggest firing up the grill.

Grilling offers a vast amount of options for meals and so does our local farm stands as well as fish markets and butchers.  There is nothing like a farm-to-table meal! The following dinner menu options are those that can all be cooked atop your gas or charcoal grill units, whether they are cooked classically on the grates, on a special tray or even roasted. Also, included is a suggested wine match for a delectable and relaxing summer evening experience.

Menu Option #1: The Backyard Beach

  • Bluefish seasoned with Italian herbs, crushed tomatoes and onion prepared in a foil packet.
  • Roasted corn served with butter, sea salt and cracked pepper.
  • Sweet and sour cucumber salad. (No cooking necessary.)
  • Raphael's First Label Sauvignon Blanc 2010, served chilled.

Menu Option #2: Free Range Dining

  • Free range chicken, quartered and prepared with a light, honey and fresh herb glaze. 
  • Asparagus grilled with a balsamic and olive oil brushing, seasoned to taste. 
  • Roasted baby red potatoes with rosemary garlic butter.
  • Pindar's Pythagoras, served room temperature.
    (Be sure this does not sit in the sun. Keep in shady, cooler place before serving.)
