Lia Fallon New Chef at Jedediah Hawkins Inn

Lia Fallon, former owner of Amarelle in Wading River, takes over reins Friday night.

Lia Fallon, well-known on the North Fork as former owner and chef at Amarelle, a fine dining establishment in Wading River which closed in January, is set to begin a new culinary journey as chef at the Jedediah Hawkins Inn in Jamesport on Friday.

Fallon confirmed Friday that her opening night would be Friday. "It's exciting," she said.

In November, Keith Luce, executive chef and owner at the Jedediah Hawkins Inn/Luce and Hawkins Restaurant in South Jamesport took his leave.

Of Fallon's new position, Luce said Friday, "I wish them all success." 

He added that he is no longer involved with the restaurant. "I have no involvement whatsoever and am about to announce my new businesses," he said.

Fallon closed Amarelle after a Sound Avenue accident in December that left her badly injured and took the the life of .

She said at the time that the inability to keep a staff during the slow season led to her decision.

Fallon continued to work in catering and consulting over the past months and cooked a four-course Valentine’s Day dinner at Roanoke Vineyards in Riverhead.
